How it's calculated
Water = rice × ratio (by volume): long-grain white 1.75, basmati 1.5, jasmine 1.25, brown 2.25, wild 3, sushi/short-grain 1.1. 1 cup uncooked white rice makes about 3 cups cooked.
Frequently asked questions
Should I rinse rice?
Rinsing removes surface starch for fluffier, less sticky rice — good for basmati and jasmine. Skip it for risotto.
Why is my rice mushy?
Too much water or lifting the lid. Reduce the water slightly and let the rice rest covered for 10 minutes after cooking.
Is it different in a rice cooker?
Rice cookers need slightly less water because little evaporates — follow the cup lines inside the pot.
